Trahana Pasta with Mastiha 340g
"Trahana" is a type of pasta made of flour and semolina. It is a traditional Greek pasta and it has different variations, trahana in tomato sauce, with yogurt or with trahana herb. It has a granular and irregular shape. It is cooked either as a soup with plenty of water, or in a thicker version, with less water. During the production of handmade tarhana, a thick mixture of flour and semolina is boiled and then left in the sun to dry.
Instructions for preparing:
Trahana 200g (one cup) , yields 2 servings. Boil water in a pan, lower the heat, add the trahana and preferably oil, tomato sauce, salt and pepper. The cooking time is 15-20 minutes on low heat. Usually served with feta cheese, sour cheese and kopanisti.
For those who want to escape from the traditional way of cooking, trahana can replace rice stuffed to be served as a salad with onion and mint or to accompany grilled meat.
For 4 Servings of trahana use: 1200ml water, 4 tablespoons trachana, 100g sauce, 4 tablespoons of olive oil, a little salt and pepper.
