The factory handles wheat flour, peanuts, nuts, eggs, milk.
The Trahana is a pasta made of flour and semolina. Its shape is irregular and grainy.
It is cooked either as a soup, boiled in enough water or thicker with less water. Trahana from Chios is cooked with tomato and wild herbs.
Preparation instructions
200gr trahana (one cup) for 2 servings. After the water has boiled in a pot, lower the heat, add the trahana and according to taste, add oil, tomato sauce, salt and pepper. Cooking time is 15-20 minutes, at a low heat. It is usually served with feta cheese, sour goat cheese or spicy cheese dip.
