Shrimp and zucchini marinated with mastiha

Ingredients for 6 servings

  • 2 medium fresh zucchinis
  • ½ kg well-cleaned cooked shrimp
  • ⅓ cup extra virgin olive oil infused with mastiha
  • 4 tbsp freshly squeezed lemon juice
  • zest of 1 lemon
  • 1 garlic clove, crushed
  • 1 tbsp finely chopped fresh thyme or thyme sprigs
  • 1 tbsp finely chopped fresh mint or oregano
  • salt and freshly ground black pepper
  • a pinch of cayenne pepper

  1. Cut off the ends of the zucchinis. Using a mandolin or a very sharp knife, slice the zucchinis into very thin round slices.
  2. In a large bowl, mix the zucchini with the shrimp.
  3. In a medium bowl, whisk together the olive oil, lemon juice, lemon zest, garlic, herbs, mint, salt, pepper, and cayenne pepper, and pour the sauce over the zucchini and shrimp.
  4. Cover the bowl and let the mixture marinate in the fridge for at least 1 hour or up to 3 hours.
  5. Serve the dish cold.
