Warm vegetable tabbouleh with mastiha from chios

Ingredients for 4 servings

  • 200g medium-sized bulgur
  • 2 cups water
  • 1 tbsp zucchini, finely diced
  • 1 tbsp carrots, finely diced
  • 1 tbsp red bell pepper, finely diced
  • 1 tbsp green bell pepper, finely diced
  • 1 tbsp yellow bell pepper, finely diced
  • 1 tbsp white mushrooms, finely chopped
  • 200ml water or meat broth
  • ½ tomato, finely diced (about ½ cup)
  • 3 drops Mastic essential oil from Chios or 1 tbsp Mastic-flavored olive oil
  • 1 tbsp white mushrooms, finely chopped
  • salt and pepper
  • extra virgin olive oil and chopped parsley for serving

  1. Soak the bulgur in cold water for 2 hours.
  2. Sauté all the chopped vegetables in olive oil for about 2 minutes. Add the tomatoes, water or broth, and season with salt and pepper to taste.
  3. Once the liquid in the pot reduces, add the Mastic oil and bulgur. Stir well. Serve warm, drizzling with a little olive oil and garnishing with freshly chopped parsley.
