Mastiha scented brownies

One pan of Brownies

  • 2 sticks (16 tbsp) of butter, more for the pan and parchment paper
  • 240 g of high-quality dark chocolate
  • 4 eggs
  • ½ tsp salt
  • 1 cup of brown sugar
  • 1 cup of white sugar
  • 2 tsp of Mastic powder
  • 2 tsp of vanilla extract
  • 1 cup of flour
  • ½ cup of chopped walnuts or ¾ cup of whole walnuts, optional.

  1. Butter a 33 x 23 cm baking pan and line it with buttered parchment paper.
  2. Preheat the oven to 180˚C (350˚F). In a double boiler over gently simmering water, melt the butter and chocolate together. Let the mixture cool slightly. In a large bowl or mixer, beat the eggs. Add the salt, sugars, Mastic, and vanilla, and continue beating. Pour in the chocolate mixture and continue mixing. Add the flour and stir gently until the ingredients are combined. If using chopped walnuts, add them to the mixture.
  3. Transfer the mixture to the prepared pan. If using whole walnuts, place them on top of the batter.
  4. Bake the brownies for 35-40 minutes, or until they begin to shine and the crust starts to crack on the surface. Let them cool in the pan on a wire rack.
