Mediterranean cheese croquettes with mastiha

Ingredients for 6 servings

  • ½ - ¾ cup all-purpose flour, plus extra flour for dusting
  • ½ tsp baking powder
  • 2 eggs
  • 1 cup grated graviera or kasseri or another mild Mediterranean yellow sheep's cheese
  • 1 cup grated parmesan or kefalotyri
  • 2 tsp mastic crystals, ground with a little salt in a mortar and pestle
  • ½ cup finely chopped parsley
  • salt and black pepper, to taste
  • olive oil or other oil for frying

  1. Mix the flour and baking powder. Using an electric mixer, lightly beat the eggs. When they froth, add the flour mixture and beat until the ingredients combine into a smooth mixture. Add the cheeses, mastic, parsley, and pepper. Taste and add salt if needed.
  2. Spread about 1 ½ cups of flour on a large plate or on a piece of parchment paper. Using a spoon, shape small parcels or elongated croquettes from the mixture. Dust them with flour.
  3. In a large, heavy pan, heat about 1.5 cm of oil until hot but not smoking. Place 3 or 4 croquettes (or as many as can fit comfortably without sticking together) in the hot oil and fry until golden brown on all sides. Remove them, let them drain on paper towels, and serve them hot.
