Grilled sardines in grape leaves with tomato and mastiha sauce

Ingredients for 4 servings

  • 12 grape leaves in brine
  • 12 medium sardines well cleaned
  • 4 tablespoons extra virgin olive oil
  • 3 fresh spring onions finely chopped green tops trimmed
  • 2 garlic cloves finely chopped
  • 4 medium ripe tomatoes seeded and finely chopped
  • one third cup dry white wine
  • one quarter cup chopped parsley
  • one quarter cup chopped fresh mint
  • salt and freshly ground black pepper
  • half teaspoon paprika
  • one heaping teaspoon ground mastiha

  1. Blanch the grape leaves in a pot of boiling water for about 3 minutes Remove them with a slotted spoon to a colander and rinse with cold water.
  2. Lightly oil a glass baking dish large enough to hold the sardines in a single layer Preheat the oven to 180°C.
  3. Heat 1 tablespoon olive oil in a medium pan over medium heat and sauté the spring onions and garlic for about 5 minutes until softened. Add the tomatoes wine mastiha powder and cook uncovered for about 5 to 7 minutes until the tomatoes lose most of their liquid Add the parsley and mint and remove from the heat.
  4. Season each sardine with salt and pepper and wrap each one in a grape leaf Place them in the baking dish seam side down Spoon the sauce evenly over the sardines Drizzle with the remaining olive oil.
  5. Cover the dish with aluminum foil and bake for about 25 minutes until the fish is tender. Remove from the oven and serve three sardines per plate with a bit of sauce on top of each.
