Raw artichoke salad with mastiha-feta vinaigrette

Ingredients for 6 servings

  • 1 large lemon
  • 12 small artichokes
  • 1/3 cup extra virgin olive oil flavored with Mastiha
  • freshly squeezed juice of 1 large lemon
  • 1 garlic clove, crushed
  • ½ cup finely chopped fresh mint or basil
  • freshly ground black pepper
  • 3 tbsp grated feta cheese
  • 1-2 fresh scallions, cleaned and sliced into very thin rings

  1. Cut the lemon in half and squeeze it into a bowl with 3-4 cups of water. Using a sharp knife, cut off the tough outer leaves and the spiny top leaves from each artichoke. Then, cut the artichokes in half lengthwise and use a small spoon to scrape out and remove all the fuzzy, pink interior.
  2. Cut each half again in half lengthwise and immediately place the pieces in the lemon water. In a blender, combine the olive oil, lemon juice, garlic, mint or basil, pepper, and feta.
  3. Blend until smooth. Drain the artichokes from the lemon water, place them in a bowl, and add the feta vinaigrette. Toss gently to combine.
  4. Garnish with finely chopped fresh scallions and serve immediately.
